Message from the Bayou

Thanks for visiting Great Cajun Cooking. My name is James Callaway. By day, I'm a software developer for a hydrographic survey company in Lafayette, LA. The only thing I really enjoy more than the computers is cooking. In November 1999, Donny Fontenot, a good friend, asked if I could build a website. Without any hesitation, I said sure. Man, I didn't have a clue as to what I had gotten myself into until it was too late.

Our early versions of this site were on Tripod. Interest in the site was unbelievable, I couldn't keep up with the static pages. So, in May 2000, we registered this domain, GreatCajunCooking.com, and have been here since.

We created this site so we can share the great food and lifestyle we enjoy with you! We hope that you will find the information here useful.


I consider this site my personal cookbook. How many times have you prepared a wonderful meal and people ask you for the recipe? Now I just direct them here. If you would like to have your recipes here send them in.

Born and raised in New Orleans, I really didn't know how unique the Cajun and Creole lifestyles are. You know how easy it is to take the things you've known since day one, for granted. In the late 80's, I moved to Lafayette, LA. There is no way you can hide from the Cajun Culture in Lafayette; it's everywhere. Heck, my kids speak French! If you have never been to Southern Louisiana, shame on you.
