8oz cream cheese (cubed)
1 stick + 2 tablespoons margarine
2 lb crawfish tails
1 cup chopped onion
1 cup chopped bell pepper
1 can cream of mushroom (or shrimp) soup
1-2 cups cooked rice
1-2 cups shredded cheese
1 cup fried onions
Soften 1 stick of butter and cream cheese and combine until smooth. In sauce pan, melt 2 tablespoons margarine and sauté onions, bell pepper and crawfish tails until seasonings are soft and clear. Add the mushroom soup and cooked rice. Stir in garlic powder and pepper. Add the cream cheese mixture, then top with cheese and fried onions.
Bake at 350 F for 30 minutes or until bubbly.
Shrimp may be substituted for the crawfish. Freezes well. Enjoy!
