1 pound cleaned crawfish
1/2 pound butter or good grade margarine
2 medium onions, chopped
1/4 bell pepper, chopped
2 cloves garlic, minced
1/2 cup each onion tops and parsley
1/2 can cream of mushroom soup
1 chicken bouillon cube
Place butter, onion, bell pepper, and garlic in a heavy pot. Cook until well done. Add crawfish, mushroom soup, bouillon cube, onion tops, and parsley. Cook for an additional 15 minutes. Add salt and red pepper to taste. Serve over cooked rice.
